Busy. Just plain ol’ busy.
I”m not sure how else to explain the last few days except for busy. Almost overwhelmingly busy as a matter of fact.
Over the weekend I decided to bulk cook a bunch of different meals and vacuum seal them with our FoodSaver I bought for Jim for Christmas a few years ago. Yes, it’s a gift he actually wanted and it’s got a ton of use over the last few years. We buy all of our meat in bulk from Costco and then divide the packages into smaller servings and vacuum seal them. When thawed months later the meat is as good as it was the day we bought it. Simply delicious.
But I digress. As usual.
So Saturday I was busy. I picked out some recipes, ran to the grocery store and I was set to cook. I made a double batch of meat loaf; chicken tetrazzini and a double batch of Indian summer chili. And then I made beef strip and asparagus for dinner.
I spent Sunday making corn, potato and chicken chowder to freeze and chicken dumplings for dinner.
I also had a babysitting co-op meeting on Sunday evening and we had a play date with some friends Sunday morning.
Needless to say I didn’t get a post written for Monday. And there are no photos or recipes to include for Tuesday. Our home network where our photos are stored needs to be reset so I cannot connect to it from my laptop. What that means is that I cannot access any photos and I cannot upload any new photos.
And I’m too tired to walk upstairs and fix it.
So you’ll just have to wait another day (or two) for a more exciting post. Sorry.
But once the home network is connected again and I have an ounce of energy to type up the recipes there will be plenty to share. And trust me when I say these recipes are yummy delicious and you will want to print them off for yourself.
