Super Easy and Absolutely Delicious Manicotti (Freezer Meal)

This is a must share recipe.  It was a  recipe that was shared with me by my best friend and one that I have to pass on to everyone I know.  It is super easy to make and absolutely delicious.  And the best part is that you can double or triple the batch and freeze it!  How awesome is that?!

I tripled the recipe this last time and it actually made 4 batches.  I threw one batch in the oven for that evening and the other three batches are all frozen separately for future use.  Yum!

So now when we are running late or just don’t feel like cooking we have a super yummy meal at the tip of our fingers.  We just need to add the spaghetti sauce and bake.  How easy is that?!  Makes you want to share this recipe with everyone you know doesn’t it?


(Serves 6-7)

**Ingredients and instructions updated from original recipe card above.**
• 1/2 pound ground beef
• 1 onion (diced)
• 3 garlic cloves (diced)
• 1 cup cottage cheese
• 4 oz shredded mozzerella cheese
• 1/2 cup mayonaise
• 1/2 t salt
• 1/2 t garlic powder
• 1/2 t onion flakes
• 1 t Italian seasoning
• 7 manicotti shells
• 1 jar spaghetti sauce (to use after freezing when ready to eat)

Instructions (When Freezing)
1. Cook manicotti shells according to instructions on box.
2. Brown ground beef, onions, garlic and mix with remaining ingredients.
3. Stuff mixed ingredients into cooked manicotti shells.
4. Place (7) stuffed manicotti in freezer bag and freeze.

Instructions (When Ready to Eat)
1. After Remove from freezer and thaw overnight in fridge.
2. Place half jar of spaghetti sauce on bottom of baking dish.
3. Place (7) stuffed manicotti on top of sauce.
4. Pour remaining sauce over manicotti.
5. Season with additional (as desired) onion flakes, Italian seasoning, garlic powder.
6. Cover with foil and bake at 350 degrees for 25 minutes.  Uncover and bake for an additional 10 minutes.  Or until heated through.
